Chocolate Cupcakes with Ganache Icing

We celebrated the hubs birthday in the last week of September by having a dessert party with all of our friends. It was also a bit of a going away party, since it was the last get together we would have in our last place. For his birthday, Joel asked for two things in his dessert: chocolate cupcakes & cream cheese. So, I made him chocolate cupcakes with peanut butter cream cheese buttercream icing and chocolate ganache on top. Talk about a mouth full. I got the recipe from Smitten Kitchen, but I made cupcakes instead of the cake like they did. This recipe is SO rich! I can only eat half of a cupcake, but they are amazing. My favorite part is the peanut butter cream cheese icing, it's so yummy. 

Recipe

Cupcake 
2 1/2 cups of granulated sugar
3/4 cup unsweetened dutch-proccessed cocoa powder 
2 cups all-purpose flour 
2 tsp of baking soda
1 tsp of salt
1 cup vegetable oil 
1 cup sour cream 
1 1/2 cup of water
2 tblspn of distilled white vinegar 
1 tsp vanilla extract 
2 eggs 

Preheat oven to 350 

In a large bowl, sift flour, sugar, cocoa powder, baking soda, and salt mixing well. 
Add the oil and sour cream to the dry mix and combine.
Gradually beat in the water, then blend in the vinegar and vanilla. 
Whisk in eggs, one at a time and blend well. 
Fill your cupcake pan in each individual 3/4 of the way full 
Bake 30-40 minutes, or until inserted toothpick comes out clean 
Let the cupcakes cool (I put them in the freezer for 15 minutes) 

Peanut Butter Cream Cheese Frosting 
10 oz cream cheese, softened at room temperature 
1 stick of butter, softened at room temperature 
5 cups of powdered sugar, sifted
2/3 cup of smooth peanut butter 

In a large bowl with a mixer beat the cream cheese and butter until light and fluffy. Gradually beat in powdered sugar 1 cup at a time. Add the peanut butter and beat mix until thoroughly blended. 

Chocolate Ganache 
8 oz semi-sweet chocolate chips 
3 tblspn smooth peanut butter 
2 tblspn light corn syrup 
1/2 cup of half-and-half 

Place a pan of water on the stove and bring to a boil 
In a small bowl combine chocolate chips, peanut butter and corn syrup
Wearing oven mitts, carefully melt chocolate mix over boiling water, do not over heat or chocolate will be ruined 
Remove from heat and using while still warm, add a small amount over each iced cupcake and spread to cover top of cupcake
