Homemade French Fries

I was inspired to make homemade french fries like these by Gwyneth Paltrow's recipe here. Really, these are just normal french fries with olive oil and sea salt, same way I make my potato bites, but her picture is what made me crave them.

Potatoes
Olive Oil
Sea Salt

Wash potatoes and soak them in cold water for 30 minutes. Preheat your oven to 400 degrees. You can peel the potatoes, or not, sometimes I do, sometimes I don't. Cut the potatoes in half, then cut the half in half, and continue until you have spears. Place onto a sprayed cooking sheet and drizzle olive oil and sea salt. With a spoon, mix the olive/salt mix over the fries, until all the fries are coated. Cook potatoes for 20-25 minutes, or until golden brown. Turn them halfway through cooking. Carefully remove from oven and transfer to a bowl with paper towel to remove extra grease. Let cool, then enjoy!
