This is a rich recipe, but a fun one! I start off this recipe with my Buttermilk Pancake Recipe, and add some fun ingredients from there to shake things up!
Peanut Butter Banana Pancakes
3 tblspn butter, melted1 1/2 cups of buttermilk
1/2 cup of milk
dash of vanilla
1/2 tsp of salt
2 tsp of baking powder
1/2 tsp of baking soda
2 cups of flour
2 tblspn of white sugar
1/4 cup of walnuts, toasted (optional)
Bring a medium skillet to medium-low heat. In a large bowl, combine melted butter, egg, and buttermilk. Add a dash of vanilla. In a different bowl, add salt, sugar, flour, baking soda, and baking powder. Combine dry ingredients with liquid ingredients and mix well. Add the 1/2 cup of milk and mix well. Add toasted walnuts into batter. Spray or butter skillet and add a little bit of batter. Once batter begins to bubble around edges, flip over and let both sides brown
Remove from pan and add more batter. Once pancakes are done, lay one on a plate, then spread a thin layer of peanut butter, topping it with a few banana slices. Continue pattern until desired stack has been made. Top with maple syrup!
