Chocolate Chip Muffins


1/2 cup of butter, softened 
1 cup of white sugar 
2 eggs 
dash of vanilla 
1 cup of buttermilk 
1/2 teaspoon of kosher salt 
1 teaspoon of baking powder 
1 teaspoon of baking soda 
2 1/2 cup of flour 
1 1/2 cup of semi-sweet chocolate chips 

Preheat oven to 375 

Soften butter, then mix with sugar until well-combined. Crack eggs one at a time, and whisk into sugar mix. Add the vanilla and buttermilk, mixing well. 

In a separate bowl, combine all dry ingredients except chocolate chips, and toss until well combined. 

Combine dry mix with liquid mix, until a batter forms and all ingredients are fully combined. Add chocolate chips to the mix and toss until coated in batter. 

Using a muffin tin with paper liners, scoop out a batter using an ice cream scoop and pour into each individual liner. 

Bake 20-25 minutes, until knife comes out clean. 

Cool 5-10 minutes, then enjoy!

  1. Oh, these sound goooood! Wonder if I can convert them to gluten/dairy free? Might just give it a try one day! :-)
