Homemade Biscuits & Jam

Biscuit love. This recipe has become a fan favorite in my house and is cooked up on a weekly basis. They are quick and easy and full of flavor. Mhm.

Biscuits |
1 stick of cold unsalted butter
2 cups of unbleached all-purpose flour 
1 tablespoon of baking powder 
1 teaspoon of salt 
3/4 cup of whole milk 
1/2 stick unsalted butter, melted 
1/2 teaspoon sugar + 1/4 teaspoon ground cinnamon, mixed

Preheat the over to 450 
Grease a cast iron skillet with a little bit of butter. 
Sift the flour, baking powder, and salt into a large mixing bowl. Pulse in 1 stick of cold butter until combined. 
Add milk and mix gently until dough forms. 
Drop large spoonfuls of dough into the skillet then sprinkle cinnamon mix over biscuits followed by a thing slice of butter. 
Bake 12-15 minutes or until golden brown. Serve hot with butter and jam. 

Berry Jam |
2 1/2 cups of berries 
3/4 cup of sugar 
1 teaspoon of lemon juice 

In a heavy sauce pan over medium-low heat, combine berries + sugar+ lemon. 
Mash down the fruit with a wooden spoon and bring to a boil. Once boiling, lower the heat and cook, stirring often for 15 minutes. 
Carefully transfer the jam into a glass jar and let cool. Keeps for up to 2-3 weeks.
